4-5 boneless pork loin chops
2 tablespoon olive oil
1 1/2 teaspoon whole black peppercorns, crushed
2 teaspoon kosher salt
2 medium shallot, minced
2 tablespoon fresh thyme leaves
5 tablespoons cider vinegar
